Veggie Breakfast Bun (Gluten free)

This is my wife’s favourite veggie breakfast, which is really quick and easy to make! I travel a lot with my job so breakfast is always on the move. My go to places are one of Pret, Starbucks or Costa, as they all have breakfast buns, all with their own version, but none seem to be Gluten free. Enjoy!:

Ingredients

  • Brioche Bun (Gluten free), I use Genius, best toasted
  • 1 egg
  • Handful of mushrooms – sliced
  • Handful of spinach
  • Olive oil
  • Salt & pepper
  • BBQ sauce (Optional)
  • Mayo (Optional)

Method

  • Heat olive oil in a saucepan on a medium / high heat
  • Add mushrooms and cook until crispy (approx 5-10 mins), adding salt and pepper to taste
  • Toast the brioche bun
  • Poach the egg forĀ  5 mins

To prepare:

  • Put a layer of spinach on the base of the bun
  • Next add the mushrooms
  • Then place the poached egg on top, I then slice the egg so that the yolk runs through
  • Then just season to taste
  • BBQ on the top bun and enjoy!
